Ingredients
(Makes 12 Muffins)
- 60g margarine, melted
- ½ cup sugar
- 1 large egg, lightly beaten
- ½ cup reduced fat milk
- 1½ cups wholemeal, self raising flour
- 1 cup freshly grated apple, with skin on or 1 cup of canned pie apple
Method
1. Pre-heat oven to moderate (180 °C)
2. Line a 12 x 1/3 cup capacity muffin tin with paper cases.
3. In a large bowl combine margarine, sugar, egg and milk.
4. Sift flour and cinnamon over the mixture and stir until just combined (the batter should be lumpy).
5. Fold in the grated apple.
6. Spoon into muffin tins, filling the cases 2/3 full.
7. Bake for 15-20 mins.
8. Place on a wire rack to cool.
