Four bean and corn salad

GREEN (NSW & ACT)

Ingredients (Serves 10)

  • 1 x 400g can four bean mix, rinsed and drained
  • 1 x 400g can corn kernels, rinsed and drained
  • 2 tomatoes, diced
  • 1 red capsicum, diced
  • 4 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon mixed herbs (dried or fresh)
  • 1 clove garlic, finely chopped

Method

1. For dressing: combine olive oil with mixed herbs and lemon juice.

2. Combine all vegetables and drizzle with the dressing, so that the vegetables are lightly covered.

3. Mix well and serve.

Notes

• You can use dried mixed herbs, or if herbs are grown in your school garden use fresh herbs such as basil, parsley, rosemary and thyme.
