GREEN (NSW & ACT)
A fun alternative to sandwiches and a great way to get lots of salad into the lunch box. Kids can help choose their fillings – encourage them to include at least four salad items.
Serves 4
Ingredients:
- 4 wholemeal wraps or pita bread
- 1 avocado
- 1 x 425g can tuna in spring water, drained
- 1 medium carrot, grated
- 1 cup lettuce, shredded
- 2 tomatoes, sliced
- 1 Lebanese cucumber, diced
- 1 small tin corn kernels, drained and rinsed
- 1 cup reduced fat cheese, grated
Method:
- Spread each wrap with avocado.
- Top with tuna, salad ingredients and cheese, dividing evenly between each wrap.
- Roll up tightly and slice in half diagonally.
Variations:
You can substitute the tuna for any protein of choice such as a hardboiled egg or lean chicken breast.
