GREEN (NSW & ACT)

A fun alternative to sandwiches and a great way to get lots of salad into the lunch box. Kids can help choose their fillings – encourage them to include at least four salad items.

Serves 4

Ingredients:

  • 4 wholemeal wraps or pita bread
  • 1 avocado
  • 1 x 425g can tuna in spring water, drained
  • 1 medium carrot, grated
  • 1 cup lettuce, shredded
  • 2 tomatoes, sliced
  • 1 Lebanese cucumber, diced
  • 1 small tin corn kernels, drained and rinsed
  • 1 cup reduced fat cheese, grated

Method:

  1. Spread each wrap with avocado.
  2. Top with tuna, salad ingredients and cheese, dividing evenly between each wrap.
  3. Roll up tightly and slice in half diagonally.

Variations:

You can substitute the tuna for any protein of choice such as a hardboiled egg or lean chicken breast.
