Ingredients
1 l 99% Apple Blackcurrant Juice
4 tsp gelatine
1 ½ bananas, finely sliced
24 blueberries, fresh or frozen
Method

Heat 60% of juice in the microwave for 2 minutes on HIGH

Stir in gelatine until completely dissolved

Stir in remaining juice

Cover with glad wrap and refrigerate until set

Once the jelly has set (best to make the afternoon or day prior), mix the jelly with a spoon so it becomes a chunky texture. Evenly distribute the chunky jelly into cups.

Use a straw to push a hole in the slice of each banana (you can do multiple slices at once!). Lay 2 slices of banana on top of each cup of jelly, then place a blueberry in the hole of each banana slice.

Serve with a spoon.
Tips
- Keep the discarded banana pieces (that you poked out with a straw) - use them in a fruit salad, smoothie, or freeze for later.
- 24 blueberries is approximately 1/3 cup.
- If you don’t have a microwave, you could heat the juice on a stovetop.
