Ingredients

 1 cup white self-raising flour

 1 cup wholemeal self-raising flour

 2 tsp cinnamon

 ½ cup margarine, melted

 ¾ cup reduced-fat Greek yoghurt

 ½ cup honey

 1 ripe banana

 180 g raw baby spinach

 1 large egg

 1 tsp vanilla extract

Method

Preheat oven to 180°C.

Lightly coat patty pan(s) with cooking spray.

In a bowl, sift together flours and cinnamon, making a well in the centre.

Place remaining ingredients into blender and blend.

Pour wet mixture into the well of the dry ingredients and mix until just combined.

Spoon into patty pan wells and bake for 15-20 minutes or until skewer inserted comes out clean.

Serve warm or cooled at room temperature. You can serve individually, or 2-3 per serve.

Tip

  • If you don’t have a patty pan, you could always just pour ¼ cup of mixture onto a lined baking tray (spaced out, as you would with cookies).
