Ingredients

 4 cups rolled oats

 2 tsp ground cinnamon

 4 tsp ground ginger

 ¼ tsp allspice

 ½ cup honey

 ½ cup olive oil

 2 tsp vanilla extract

Method

Preheat oven to 180ºC and line 2 large baking trays with baking paper.

Combine oats, cinnamon, ginger and allspice in a bowl and set aside.

In a separate bowl, whisk together the honey, olive oil and vanilla extract.

Pour the honey mixture over the oat mixture and stir to combine.

Spread granola mixture evenly between trays.

Bake in the oven for 10 minutes.

Remove from the oven and stir, then bake for a further 7 minutes, or until golden brown.

Allow to cool completely on trays, then break granola up into chunks.

Tip

  • Try making a yoghurt parfait: In a cup, add alternating layers of reduced-fat vanilla yoghurt and granola, then top with fresh berries.
