Ingredients
1 ½ cups milk
1 egg
1 cup self-raising flour
1 cup wholemeal self-raising flour
25 g polyunsaturated or monounsaturated margarine
¾ cup sultanas
Method

Whisk milk and egg together in a jug.

Sift flours into a bowl. Make a well in centre. Add milk mixture and whisk until just combined.

Heat a large non-stick frying pan over medium heat. Brush pan with margarine. Pour ¼ cup mixture onto the pan. With the sultanas, create a cross on the pancake. Let the pancake cook for 2 to 3 minutes or until bubbles appear on surface.

Flip pancake and cook until cooked through.

Transfer to a plate. Cover loosely with foil to keep warm. Repeat with remaining mixture and sultanas, brushing pan with margarine between batches.

Serve.
Variations
- Instead of sultanas, you could use blueberries! Alternatively, you could use honey, maple syrup or yoghurt to create the “cross” when serving the pancake.
- Whether or not your school/family celebrates Easter, this recipe is delicious! Instead of a cross, you could always do a smiley face 🙂
