Fruit bread jaffles

(Makes 8 toasted sandwiches)

  • Canola or olive oil spray
  • 16 slices of fruit bread
  • 1 x 400g can pie peach or pie apple
  • 200g reduced fat ricotta cheese
  • Pinch of ground ginger
  • Pinch of ground cinnamon

Method

1. Spray heated toasted sandwich maker with oil.

2. Top 8 slices of bread with 1 tablespoon of reduced fat ricotta and 2 tablespoons canned peach or apple.

3. Sprinkle with ground ginger and cinnamon.

4. Place other slices of bread on top, creating a sandwich.

5. Cook until brown in sandwich maker.

6. Serve.

Variations

Try using sliced or mashed banana or strawberries or other left over fruits you have in the fridge.
