Tuna mornay pasta bake

Serves 6
Ingredients:
- 300g pasta (penne or spirals)
 - 60g poly- or mono-unsaturated margarine
 - 2 tablespoons plain flour
 - 2 cups reduced fat milk
 - 1 x 425g can tuna in spring water, drained, flaked
 - 1 can mixed vegetables
 - 1/3 cup breadcrumbs
 - ½ cups grated reduced fat cheddar cheese
 
Method:
- Preheat oven to 180°C.
 - Cook pasta in a large saucepan of boiling water following packet directions, then drain.
 - For the white sauce:
*melt the margarine in a large saucepan over medium-low heat.
*add the flour and cook, stirring, for 1 minute.
*remove from heat when it starts to foam.
*gradually add the milk and place over medium heat, stirring constantly until the mixture thickens (approx. 5 mins).
*reduce heat to low and cook for 2 minutes. - Add the white sauce, tuna and mixed vegetables to the pasta and stir until well combined.
 - Spoon into a 2L (8-cup) capacity ovenproof dish.
 - Combine the breadcrumbs and cheddar in a bowl and sprinkle over the pasta mixture.
 - Bake in oven for 15 minutes or until golden.
