Vegetarian chilli

Serves 6
Ingredients:
- 2 tablespoons olive oil
 - 1 onion, finely chopped
 - 1 teaspoon mixed herbs
 - 2-3 garlic cloves, crushed
 - 420g can mixed beans, drained and rinsed
 - 420g can chickpeas, drained and rinsed
 - 425g can corn kernels
 - 425g can diced tomatoes
 - 1 tablespoon tomato paste
 - 1 tablespoon sweet chilli sauce
 
Method:
- Place 2 tablespoons of oil in a large saucepan over medium heat, add the onion and cook until softened. Add the mixed herbs and cook for a further minute.
 - Reduce heat to low and add the remaining ingredients.
 - Cover and simmer for 15 minutes, stirring occasionally. Remove lid and cook for a further until the mixture has thickened (approximately 5 mins).
 - Serve vegetarian chilli with warm tortillas or steamed rice and sprinkled with grated cheese (optional).
