Vegetarian chilli

Serves 6

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 1 teaspoon mixed herbs
  • 
2-3 garlic cloves, crushed
  • 420g can mixed beans, drained and rinsed
  • 420g can chickpeas, drained and rinsed
  • 425g can corn kernels
  • 425g can diced tomatoes
  • 1 tablespoon tomato paste
  • 1 tablespoon sweet chilli sauce

 

Method:

  1. Place 2 tablespoons of oil in a large saucepan over medium heat, add the onion and cook until softened. Add the mixed herbs and cook for a further minute.
  2. Reduce heat to low and add the remaining ingredients.
  3. Cover and simmer for 15 minutes, stirring occasionally. Remove lid and cook for a further until the mixture has thickened (approximately 5 mins).
  4. Serve vegetarian chilli with warm tortillas or steamed rice and sprinkled with grated cheese (optional).
