Baked tomato rice

Serves 4
Ingredients:
- 2 salt reduced stock cubes
 - 2 cups water
 - 1 onion, chopped
 - 425g can tomatoes
 - 1½ cups brown rice
 - 440g can corn kernels
 - 185g can tuna, drained
 
Method:
- Preheat oven to 180°C.
 - Dissolve the stock cube in the water.
 - Mix all ingredients into a small baking dish.
 - Cover with lid or foil and bake for 30-35 minutes until rice is tender.
